Zarza has quickly established itself as a coffee producer, primarily known for its extended fermentation process, resulting in an incredibly rich aroma.
This Gesha, carefully cultivated, harvested, and washed, allows the cultivar to shine through, creating a true symphony of smoothness.

Why this coffee?
Zarza is a highly renowned coffee farming and producing company. Its fame stems mainly from the production of highly aromatic coffees resulting from complex fermentation processes. Coffees with aromatic profiles that we like to describe as "Marvel-esque." Fun, a bit exuberant, and lacking subtlety.
For us, coffee is the result of a subtle interaction between the land, a given species and/or cultivar, as well as the hard work and thoughtful choices of the producer. All with the aim of producing something beautiful and elegant.
During our visit to Zarza in November, we tasted several fresh harvest coffees which, in most cases, tasted like banana (literally in one case).
We also tasted this elegant and delicious gesha. Subtle, pure, and delicate. With aromas that draw the taster towards the famous gesha varietal.
This coffee also presents something of a puzzle in today's specialty coffee market. Placed among a tasting table of highly processed coffees, with intense aromas and flavors reminiscent of energy drinks, it can go unnoticed. But when you take the time to focus on it for a moment, its elegance and structure clearly stand out.
It's a delicious coffee; when the cup is empty, you regret that it is.
It also testifies to the magnificent terroir and the refined approach to processing that Jonathan masters perfectly.

Zarza Coffee is a third-generation family business from the mountains of Bruselas, nicknamed the "coffee capital" of Huila.

The brewing device is not very important; we use the Orea porcelain for its fast flow rate and design.
The most important thing is to grind fresh coffee and use low-mineral water.
Ideally, the approximate water composition should be as follows:

Alkalinity: 25 ppm CaCO₃
