Why this brewer?
We are strongly of the opinion that 95% of what makes a great cup of filter coffee is the coffee itself, the grinder and the water.
But the rest still counts!
This beautiful filter brewer fills our requirement for a relatively fast flow device. To our mind this leaves most of the control down to the person brewing the coffee in dictating how much time the ground coffee is in contact with water.
Secondly, it is hand-made in Taiwan by a family run business. After a working trip to Taiwan, Paul returned in awe of the mastery the local people have over producing fine porcelain objects. So we chose this Orea porcelain model in appreciation of that mastery.
Also for equivalent strength relative to ceramic, porcelain requires much less mass. This means less heat is transferred to the brewing device and more to the coffee mass in the early stages of brewing. It also has the advantageous property of not dissipating the energy that is does store as fast as other materials such as glass.
The end result is a beautiful brewer that consistently produces balanced and sweet cup profiles with enough vibrancy to do any high quality coffee justice.
