Why this coffee?

This coffee has been sourced and roasted for fuss free extraction in any manual or fully automatic espresso machine. 

For those of us that enjoy a sweet and balanced taste in our cup. Full of fruity aromas with a delicate sweet finish. 

This version of Mr. Pink comes from Paulo Ribeiro Rocha from Sitio Sertaozinho in Brazil. Sitio Sertaozinho have developed an expertise in raised bed processing for whole fruit dried coffees.

Careful and precise harvesting coupled with slow and even drying make this yellow bourbon cultivar a delicate balance of fruity notes with depth and a clean transparent finish.

Sitio Sertaozinho is a leading example of some of the incredible natural processing many producers in this region are capable of. Excellent as a standard.

Producer story

Sítio Sertãozinho is located in the city of Cristina, in the south of Minas Gerais, in the Serra da Mantiqueira region, at an altitude of 1,300 meters. The region, with its mountainous topography, average annual rainfall of 1,600 mm and average temperature of 18.8°C, has a unique climate and soils that are favorable to the production of specialty coffees.

Coffee cultivation began on the property 48 years ago, always seeking quality in the coffee produced. Mr. Rocha and his entire family are dedicated to sustainable coffee cultivation, preserving the environment. The farm has springs and native forests, which are home to large plant species and various wild animals. In the region, it is common to see species such as the maned wolf, armadillo, monkey, guan, saffron finch and hawk, among others.

The property participates in Fair Trade; this means that producers and traders have complied with Fair Trade Standards. Fair Trade Standards were designed to address the imbalance of power in trade relations, unstable markets and the injustices of conventional trade.

The harvest is selective, done when the fruits are very ripe, and are picked manually on cloths, avoiding contact with the soil. On the same day of harvest, the coffee is packed in bags and transported to the processing center located on the farm itself. The coffee is then washed and during this process the fruits are separated.

It is then dried where it reaches the ideal level of humidity. After drying, the coffee is placed in wooden bins to rest. After resting, the beans are processed and separated into batches, then stored in COCARIVE warehouses in Carmo de Minas. The lots are stored in the COCARIVE warehouse, which today has the most modern machinery to prepare and process the coffee lots.
