Why this coffee?
We love the flavour of coffee as much as we need a good night's sleep. Having a delicious decaf on the menu means a couple of extra coffees during the day or a late afternoon cup, won’t be at the sacrifice of some quality sleep.
This lot we purchased from Ensambles in Mexico, who are keenly focused on improving, preserving and promoting Mexican coffee production.
The coffee has a sweet caramel profile with some citrus fruit, mainly orange, notes on the finish.
For people who are used to drinking low-grade commercial decaf, this coffee will be a revelation. For others already accustomed to high quality decaf processed coffees, we hope you enjoy.

Mountain Water Decaf Quetzal originates from 24 communities located across the Frailesca region and the Sierra Mariscal, traversed by the Sierra Madre de Chiapas, Mexico.
This coffee is influenced by the favorable microclimates of the El Triunfo Biosphere Reserve, which benefits local
biodiversity and the economy. The coffee farms, situated between 1,200 and 1,800 masl, are developed in polycultures
that offer significant environmental, social, and economic benefits.
The Mountain Water Decaf process, developed by Descamex in Córdoba, Veracruz, uses pure water from Pico de
Orizaba to remove caffeine from green coffee beans without chemicals. This method preserves the flavor and aroma of the coffee while removing up to 99% of the caffeine.
